Gochujang Jjigae Recipe

A gochujang jjigae recipe for the Korean stew nobody outside Korea has heard of but every household actually cooks. Pork, potato, tofu, 20 minutes, one pot.

Ingredients
  

  • 150 g / 5 oz pork belly or pork shoulder, sliced thin
  • 2 tbsp gochujang
  • 1 tsp gochugaru, Korean coarse chili flakes
  • 1 tsp doenjang, Korean soybean paste, optional but recommended for depth Substitute: 1/2 tsp white or yellow miso
  • 3 cloves garlic, minced
  • 1/2 medium onion, sliced
  • 1 small zucchini, in half-moons
  • 1 medium potato, cubed
  • 150 g / 5 oz firm tofu, cubed
  • 1 green or red chili pepper, sliced (optional)
  • 600 ml / 2 1/2 cups anchovy-kelp stock
  • 1 scallion, sliced
  • Salt, to taste

Method
 

  1. Whisk the gochujang, gochugaru and doenjang, if using, with a splash of the stock until smooth — this keeps the paste from clumping once it hits the pot.
  2. Cook the pork in a small pot over medium heat 2 to 3 minutes, until the edges brown and some fat renders out.
  3. Add the garlic and onion and cook 1 minute, until fragrant.
  4. Add the potato and the stock, bring to a boil, and simmer 8 minutes — the potato needs the longest cooking time of anything in the pot, so it goes in first.
  5. Stir in the gochujang mixture, then add the zucchini and simmer 4 minutes.
  6. Add the tofu and chili pepper and simmer 3 more minutes without stirring hard, so the tofu stays in cubes instead of breaking apart.
  7. Taste and season with salt a pinch at a time — the gochujang already carries most of the salt the stew needs.
  8. Scatter with scallion and serve bubbling, straight from the pot, with rice.
