Kimchi Fried Rice Recipe

A kimchi fried rice recipe that starts with what's actually in your fridge: old rice, old kimchi. Why both need to be old, and what to do if yours aren't.

Ingredients
  

  • 2 cups / 300 g cold, day-old cooked rice, grains separated by hand
  • 1 cup / 150 g well-fermented, sour kimchi, chopped, plus 2 tbsp of its juice
  • 100 g / 3.5 oz pork belly or spam, diced small
  • 2 tbsp neutral oil, plus more if the pan looks dry
  • 1 tsp gochujang
  • 1/2 tsp sugar, only if your kimchi tastes sharp rather than mellow
  • 2 eggs, fried separately with runny yolks
  • 2 scallions, sliced
  • 1 tsp toasted sesame oil, off the heat
  • A handful of crumbled roasted seaweed (gim) or a sprinkle of toasted sesame seeds, to finish Substitute: crushed nori snack sheets

Method
 

  1. Take the rice out of the fridge and break up any clumps with your fingers before it goes near the pan.
  2. Render the pork belly (or spam) in a dry, cold pan over medium heat until the fat runs and the edges crisp, about 3 minutes.
  3. Add the kimchi and cook 3 to 4 minutes, stirring often, until it darkens slightly and smells toasted rather than raw.
  4. Push everything to one side, add the oil to the empty side, and stir in the gochujang for 20 seconds until it's fragrant.
  5. Add the cold rice and the kimchi juice. Break up the rice with the back of the spatula and stir-fry over high heat for 4 to 5 minutes, pressing it against the hot pan in stages so parts of it actually fry rather than just steam.
  6. Taste and add the sugar only if it tastes sharp rather than savory-sweet.
  7. Fry the eggs separately, sunny-side up, while the rice finishes.
  8. Off the heat, stir in the sesame oil, divide between two bowls, top each with a fried egg and scallions, and scatter the seaweed or sesame seeds over the top.
